Jörg & Sonja – cooking for you with love
Chef Jörg Trafojer puts great emphasis on premium ingredients. Naturally,
these have to come from the immediate vicinity whenever possible – preferably
from his father's farm and therefore the family’s own production. His cooking
motto is: “In harmony with nature”.
It was this motto that helped him and his wife Sonja in their efforts to
develop the 100-year-old traditional guesthouse in Kastelbell, which they took
over in 1988, into a gourmet temple in the Vinschgau. They have assembled a
collection of beautiful and unique items with plenty of dedication and personal
effort, restoring antique furniture and presenting it in tasteful settings.
Meals are served on white Laaser marble platters custom-made for the restaurant
and precious damask from a textile mill in Milan. The landlady herself lovingly
creates the ambiance down to the floral arrangements ranging from orchids to
roses, with everything in white where possible. Awards for the traditional
yet refined cuisine followed more than 10 years after the takeover; being named
as 2000 Climber of the Year in Gambero Rosso by the restaurant guide “Le Guide”
was followed by acceptance into the association “Jeunes Restaurateurs d’
Europe”. The crowning Michelin star and 16 (out of 20) chef’s hats from Gault
Millau were added in 2001. But the honours were not limited to their
creative cuisine. Jörg and Sonja received the wine culture award in 2004. Sonja
Trafojer was elected as the first “Le Donne del Vino” of Italy. She serves
select wines with celebrated dishes.
Other awards speak for the hospitality of the guesthouse in Kuppelrain: The
2007 Ambiance Award from Gault Millau and no less than three “Fs” from the
“Feinschmecker”. One would be hard put to find more likeable hosts than the
Trafojer family, says the “Feinschmecker” about the hearty host couple of Jörg
& Sonja.
From scampi, venison carpaccio, nettle & bread rolls to fine asparagus
from the Kastelbell and kid from the home farm – the cuisine is innovative and
promises gourmet delights. While away the hours in a tastefully decorated
restaurant with hosts you are not likely to forget.
You should definitely take a look at the climate-controlled vaulted wine
cellar, which is more than 100 years old and holds a wide variety of wines from
the region and beyond. There is also a storage cellar with home-made preserves.
